1985
Pasta Fresca Naldi was opened on June 1, 1985, by Valeria Naldi, who quickly earned the nickname "pasta maker."
An artisanal business in the heart of Bologna: a workshop and shop where pasta is not just food, but an expression of tradition, community, and ancient crafts.
From the beginning, we have focused on craftsmanship: all our products—tagliatelle, tortelloni, lasagna, marmagne, and rigatoni al torchio—are made by hand or with a bronze press, using carefully selected ingredients and dedication.
1994
In 1994, Via del Pratello underwent a major road renovation project aimed at redeveloping the entire urban area. The work, which involved significant changes to the road surface and infrastructure, forced many of the businesses along the street to close temporarily, and in some cases permanently. This period marked a transitional phase for Bologna's historic street, which had always been the hub of the city's social and cultural life.
2019
Since 2019, Elisabetta Berardi, Valeria's daughter, has continued the Pasta Fresca Naldi story with passion and dedication.
The "sfogline" are the beating heart of the workshop: mornings that start early, expert hands rolling out the dough, flavors that are created together.
Being artisanal means never letting your guard down: monitoring suppliers, selecting the freshest raw materials, responding to requests, innovating where necessary—without losing the authentic soul of handmade pasta.
2025
Pasta Fresca Naldi has become a must-visit for students, workers, and tourists—for anyone seeking a genuine break, a dish that speaks of Bolognese tradition, but with the lightness of freshly made flavor.
Technology also finds its way into our lab: not to replace, but to enhance—social networks to share our creations, modern payment systems, cutting-edge equipment, clarity, ease, and a welcoming atmosphere, even for those from far away. Because tradition is meaningful when it can be shared freely.
